how do you recored and save a session so when you want to view that session again you can.

Each recording is stored in a separate file. Typically it is EDF fie.
The BioEra examples demonstrate this process. If the 'Record' button is pressed, session is recorded in file 'reply.edf'. Then if 'Replay' mode is selected it can be played back.
